  1. Planning on copying your Vegan Vursday. Just wondering: Does the keem actually STAY crispy after it's been fried? Wikipedia says it's exactly the same as sushi nori, but in my experience, that goes mushy at the slightest provocation.

  2. The keem stays crispy for the duration of a meal. The key is do not open more than you need. And put any leftovers immediately in an air tight container. We usually eat a whole packet with a meal so it is not a huge issue.

The other key thing is do not let it touch any other food until eating. For instance the sheets are kept on a separate plate and wrapped around the rice by the diner as they are eating.

  3. Oh, oh-KAY... like, handroll-style. I think I understand. Thanks!
